Breakfast is my favourite meal of the day. It's so versatile: it can be sweet or salty and the options are endless. Needless to say I like to keep things interesting. This morning I decided to shake things up and make some apple bread. And the results were... perfection. So guess what! I'm sharing!
Here's the recipe to my super delicious not red delicious apple cinnamon bread (no that wasn't a typo)
2 cups cored, peeled and diced Cortland apples (about 2 medium)
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon kosher salt
1/2 cup unsweetened applesauce
2 tablespoons canola oil
2 tablespoons milk (I used skim)
1/2 cup granulated sugar
1 large egg
1 teaspoon\\\ vanilla extract
1/2 cup walnut halves, roughly chopped
1/4 cup raisins (optional)
Preheat oven to 350 F and lightly coat a 8×4-inch loaf pan with oil or baking spray. Set aside.
In a large bowl, combine the whole wheat flour, baking soda, cinnamon, and salt. In a separate bowl, whisk together the applesauce, canola oil, milk, sugar, egg, and vanilla until smooth.
Make a well in the center of the dry ingredients, then add the wet ingredient mix all at once. Mix in just until combined. Fold in the apples, walnuts and raisins (optional). The batter will be very thick and chunky.
Pour the batter into the loaf pan. Bake for 40 minutes, until a toothpick inserted in the center comes out clean. Place on a wire rack and let cool.
Enjoy with a dollop of Greek vanilla yogurt or some nut butter.
