Frozen Yogurt Berry Barks Recipe

This is one of my favourite snacks and is especially yummy when it’s hot out.
Aside from the fact that it tastes like frozen bites of heaven, here’s why I love this recipe:
It LITERALLY takes 2 minutes! (No, not literally. I takes several minutes + freezing time, but still super quick!)
It’s refreshing on hot summer days
Berries are full of antioxidants
Greek yogurt is packed with protein - at 18g per ¾ cup, it’s almost as much as a portion of meat!
With 0% yogurt, you can make it fat free
It’s sweetened with honey for added health benefits
You can adjust the honey quantity to control the sweetness
It’s a genuine alternative to devouring a pint of Haagen Dazs while binge watching The Mindy Project
And did I mention it's freakin' delicious?
Here’s the recipe:
Ingredients
500ml plain 2% Greek yogurt (or 0% if you prefer)
1/4 cup honey
1/2 tsp vanilla extract
1/2 cup raspberries
1/2 cup blueberries
1/4 cup strawberries, sliced
Parchment paper
Directions
Line a 9×13-inch baking dish with parchment paper
In a mixing bowl, whisk together the yogurt, honey and vanilla
Pour and spread the yogurt mixture into the lined baking dish
Sprinkle with berries and gently press them into the yogurt
Freeze for about 2 hours, or until completely frozen
Use a knife to make the first “break”, then you can break the rest with your hands
Serve and enjoy! Or eat it right out of the pan. That’s good too ;-)
